PAIRING IDEA: Try this with the December 2020 Judge Palmer Sur Le Peaux

If you know me at all then you probably won't believe that I had a triumph in the kitchen! It was such a triumph, in fact, that Meredith mentioned it in the December 2020 Tasting Notes Video for the Judge Palmer orange wine called Sur Les Peaux.

But it's true. I made something delicious one night when we were having a Major Crush team meeting, and hands-down, everyone seemed to love it. And after tasting the orange wine in the December 2020 Crush Collection, I really do think Meredith is on to something: this dish would pair perfectly!

I got this recipe off of a blog I follow for the Instant Pot. I like finding simple dishes like this one that amounts to putting everything into an industrious little counter-top appliance, and in a matter of 20 minutes or so, something magically comes together!

I pretty much followed this recipe to the letter when I made it, however, I did make one substitution. I'm not a huge fan of super creamy dairy-based sauces, and to be fair if I didn't like mushrooms and butternut squash so much, any recipe with the word "Alfredo" in it would've floated right off of my radar. So to keep it lighter, I substituted almond milk for cream.

I do believe if you don't own an Instant Pot, but you do have a sturdy Dutch Oven, you could easily make this dish -- and I do believe the "wow" factor will still be there. So I've provided the link to a Pinterest post with the full list of ingredients and cooking instructions.
